Did you spend every minute outside this weekend? We did! What a glorious Spring weekend!
We are truly hoping for a repeat next weekend when we celebrate our mothers. In honor of Mother’s Day, we wanted to create a special treat for our fabulous ladies. We have always loved chocolate covered strawberries but never attempted a homemade recipe, until now!
Daughter picked up these adorable Porcelain Berry Baskets from Crate and Barrel. The baskets can be reused as a colander and to store fresh berries in the refrigerator but for now, they are perfect as a gift basket!
You can use your favorite chocolate chips or baking chocolate. We used Trader Joe’s chocolate chips but Ghirardelli Dark Chocolate is also divine with this recipe. You’ll need about 1 12 oz bag of chocolate chips for every pound of strawberries.
If you do not have a double boiler, you can create one by use a large sauce pan and a medium size bowl. Fill the bottom pan with water and turn the stove up to high. Place the bowl on top of the pan and pour in the chocolate chips.
Once the chocolate begins to melt, turn the heat down to medium/low and keep stirring.
After the chocolate chips are completely melted, you can turn the heat to low.
Line a cookie sheet with wax paper. Make sure to rinse the strawberries and dry them with a paper towel.
Begin dipping your strawberries into the melted chocolate and place on the wax paper.
After you have dipped all of your strawberries, place the cookie sheet in the freezer for 10 – 15 minutes for the chocolate to harden.
That’s it! So simple and so delicious.
